I think it is sorovatka. I was told this when trying to make cheese from my goats milk.

If you need buttermilk for a recipe you can substitute a warmed cup of milk with a tablespoon of lemon juice or vinegar mixed into it. Leave for about half an hour and it will thicken slightly. Not the real thing, but fine if used as a cake ingredient or whatever. :)

I just plugged it into Google translate and it came up with this. мътеница and reverrse translation with a different dictionary came up with buttermilk and also суроватка as whey as Scot said.

Ah yes, syrovatka is indeed whey - it was the liquid left after hanging up the curds in a cheesecloth, sorry.
